Just got done with my shopping spree for this week, although my shopping sprees have been lasting a lot longer then a week. Last weeks, weeks worth of shopping lasted 17 days and this week i planned on more meals so it might last that long again. It lasted that long because some of the items i bought for certain meals where able to actually be stretched for more then one meal. Love it when that happens! Like the chicken i bought last shopping trip has still lasted and will be used for the Baked Chicken and Spinach Flautas and the Cheddar & Cracker Chicken.

Homemade Bagels
Ingredients: 2 teaspoons dry yeast 2 tablespoons sugar 1 1/4 cups hot water 3 1/4 cups all-purpose flour 1 teaspoon salt Directions: Put half of the water, yeast and sugar in a bowl and let stand for five minutes. Meanwhile, mix flour and salt in another bowl, and make a well in the middle in which you pour the yeast mixture and the rest of the water once the five minutes have passed. Mix, and knead the dough on a lightly floured surface for about 10 minutes. The dough should feel firm, smooth and elastic. 2 Oil a large baking bowl, and turn the dough to coat. Let it rise under a damp towel for one whole hour, until doubled in size. Punch the dough down, and let it rest for an additional 10-15 minutes. 3 Carefully divide the dough into 7-8 equally big pieces, shape into balls and punch a whole in the middle. Let them rest under a damp towel on a lightly oiled baking-sheet for 20 minutes. 4 Bring a large pot of water to a boil, and heat your oven to 190°C Once the bagels are ready, drop one or two of them into the boiling water, careful not to overcrowd the pot. The bagel should float within a couple of seconds. Boil for 1-2 minutes on one side, turn, and boil for another minute or so. Continue with all of the bagels. 5 Put the bagels into the preheated oven, and bake for 10 minutes. Take the bagels out, turn them, and continue to bake for another 10 minutes. Remove from oven, spread on some cream cheese and smoked salmon and take a big bite. You deserve it. | ||||||||

Baked flautas stuffed with seasoned, shredded chicken, spinach, and cheese are crispy, but don’t have the greasiness of fried versions. To shred poached chicken easily, put it into the bowl of a stand mixer fitted with the paddle attachment and mix on medium for 45 seconds. Crispy Black Bean Fritters with Creamy Cilantro Dipping SauceCrispy Black Bean Fritters:
Directions: Combine all the ingredients in a large bowl, stir well to combine (add more flour if it's not binding). Season with sea salt and black pepper. In a large skillet, add three tablespoons of oil to the pan on medium heat. When hot, add tablespoonfuls of the bean mixture. Fry on one side until golden brown and crispy (about 3 minutes). Flip over for a further three minutes. Remove and drain on a paper towel. Season with fresh black pepper and sea salt. Serve with dipping sauce on the side Cilantro Dipping Sauce:
Directions: Blend all the ingredients for a smooth consistency. Season with sea salt and black pepper. | ||||||||
Cheddar & Cracker ChickenFreezer Meal Ingredients:
Directions: Heat oven to 350° F. In a bowl, combine the crackers, cheese, garlic, scallions and ¼ teaspoon each salt and pepper. Pound the chicken to about 1/4 - 1/2 inch thickness with a meat mallet. Dip the pounded chicken in the butter, then in the cracker mixture, pressing gently to help it adhere, and place on a foil-lined baking sheet. Sprinkle any remaining cracker mixture on the chicken and drizzle with any remaining butter. Bake until the chicken is golden brown and cooked through, 20-25 minutes. * To make ahead/freezer meal - Prepare the chicken as directed above. After coating it in the cracker mixture, place chicken in a gallon sized freezer bag, seal and freeze flat in your freezer. When ready to prepare, place on a baking sheet and drizzle with melted butter. Bake as directed above from frozen until cooked through, possibly 30-35 minutes depending on thickness. | ||||||||

Fill the pasta shells with the filling and place in a baking dish. Sprinkle the remaining 1/4 cup of cheese over filled shells. Preheat oven to 350 degrees and bake shells uncovered for 30 minutes or until shells are bubbling hot and cheese melts. * To make ahead/freezer meals - Prepare as directed but place filled shells in an oven- and freezer-proof baking dish. Top with remaining 1/4 cup of cheese over filled shells, cover and freeze. When ready to prepare, defrost. Place potatoes, olive oil and rosemary in separate freezer bag, toss well to coat and freeze. When ready, remove meatloaf from pan and place in bottom of crockpot. Put potatoes around edge of meatloaf and cook on low for 6-8 hours. Serve meatloaf with warm potatoes & green beans! | ||||||||

I'm so hoping this will help my life get a little easier! I'm still fairly new to meal planning. I use to do it for awhile a year or so ago when i was shopping for a whole month. I got out of the routine for a long time and now that i decided to switch it to weekly shopping i feel like i'm starting all over again. Since i'm about to have baby #3 in a little over a month i really am going to try to do some frozen meal and see how it works for me.
I recently read a blog where this lady was writing about how little money she lives off of and she said her family of 4 average about $400 a month in food budget. I have been budgeting $400 for food and any toiletries for years and it has worked pretty good. For a minute i felt good about myself since this lady and her followers thought $400 for 4 for a month was great, but then it inspired me to push and try harder to get that amount down even more. This last month shopping weekly and meal planning according to what i have on hand, what is on ad match and what goes along with coupon deals i was able to get that $400 down to about $370. Plus i am pretty confident i can get it down even more.
I'm going to work on making more stuff homemade. I go in swings, doing great making more homemade things like bagels and bread and things and then i fall out of it. I need to just get in the habit of doing it! I plan on making some things like scrambled egg muffins and pancake muffins and freezing them so i can just pull a few out here and there and have breakfast already made. I'm just trying to brain storm and come up with things that will make my life easier with this upcoming newborn.
It's a challenge and i'm looking forward to it!

I have budgeted $400 a month (4 person family) for grocery, toiletries... any diapers or wipes or things that like i might need. I had been shopping monthly since my husband gets paid monthly. BUT since ad matches vary from week to week i was buying a big bunch of my food and then going back each week to get stuff for my stock pile when items went on sale.
Instead i'm going to try to shop weekly. By doing this i'm planning on looking at the ad matches for the week and the coupon deals for the week and plan my meal plan accordingly and shop just for the stuff on my meal plan. Some things are the major good deals i will buy more then i need that week so it can go into my stock pile.

So the nachos and burritos needed salsa, well since the Red Gold 16oz salsa was on ad match for $.50 a piece instead of buying one (which is all i would have needed this week) i bought 7 because really... $.50 for 16oz of salsa doesn't come around to often.
I also grabbed a few extra Mission Tortilla shells because i wanted to freeze some and it was a really good deal.
